    Papa a la Huancahina (potatoes salad)

    Chupe de Camarones (Cream shrimp soup)

    Ceviche (Raw fish entree)

    What about the eastern Jungle in the Amazon drainage basin.  I lived there for two years among the local tribes where it borders Ecuador.  Common food comes out of the jungle such as tapir, monkey is the most common meat, birds, yucca or manioc, fried patties of mashed chonta palm fruit, wild pig, bananas & plantains, papaya, cayuca -- wild persimmon fruit that leaves a latex coating on your lips. . . .removed by smearing animal fat on your lips like lip balm, chirimoya fruit, freshwater fishes such as 45Kilo catfish and parana, roasted anaconda, two inch long white grubs found in rotting wood.  Berries, seeds and nuts of plants I have never seen, however they collected baskets full, chicken soup with head and feet all included called sancocha, rice and more rice sold by the trading store up river
