  1. Melt 150g of chocolate in a bowl over simmering water. Meanwhile seperate 4 eggs and whip the whites to soft peaks. When the chocolate is melted remove it from the heat and then stir in the egg yolks. Make sure the chocolate isn't too hot because the egg will scramle. Then fold in the whites, Divide into ramakins and set in the fridge.

If you want before adding egg yolks you can add the juice of an orange to give you choc orange mousses.

    Hope that helps

1 quart heavy or whipping cream

    14 ounces bittersweet chocolate, melted

Whip the cream to soft peaks and add about 1/3 of the melted chocolate. Fold gently with a rubber spatula. Mix the remaining chocolate into the whipped cream. Mix only until combined, as you will deflate the cream if you overmix. Place the mousse in a large pastry bag and pipe into decorative serving cups

  4. I make a poor man's chocolate mousse by making chocolate instant pudding according to the box directions, then folding in 8 oz tub of cool whip.  If you want to make it a little fancier, also fold in crushed oreos and serve it in margarita glasses (or other footed dessert bowls, champagne flutes or wine glasses) with a whole oreo and mint sprig for garnish.

  5. Try searching foodnetwork.com or gourmet magazine's website.  There are lots of recipes.  Enjoy!
