  1. YOU have to "blanch" it in hot water (lightly cook it), or it gets all slimy in the freezer.

    Slice in 1/4-in thin slices, drop in boiling water, immediatley remove them and dump them into an ice-water bath. Drain, freeze in freezer-quality bags.

    You can also cook them, mash them and freeze the puree.


  2. I would cut it up first. put in ziploc bag. Should stay good for three months in freezer.
