  4. This is such a great and easy recipe:  You can use any kind of cake mix and top with any kind of frosting - whatever you feel like.

    2 boxes cake mix

    4 eggs

    1 cup shortening

Mix and plop large spoonfuls on cookie sheet - drop pan on counter to flatten cookies before baking.  Bake at 350 for 8-10 minutes.

For variety, you can mix things in like nuts, coconut, choc. chips.....

  5. Since no one has answered the question you actually asked, I will.  That recipe is in the "Busy Mom's Cookbook" and is titled 'Sunshine Cookies".  I don't have it in front of me right now, but if you want to e-mail me through my profile, I can send you the exact recipe.  From memory (because it is so easy), it is something like:

    1 box cake mix

    1 egg

    2 tbsp water

The dough is usually so stiff that I add a touch extra water and mix it with my hands (put gloves on to keep the dough out of your fingernails).  Again, I can confirm the recipe once I get home from work, so you can e-mail me if you want to make sure we have everything and the correct measurements.

  6. Don't know if this was in a Pampered Chef cookbook, but it's one of my favorite cookie recipes.  You can use any flavor cake mix and add other ingredients like chocolate chips, nuts, etc.  Lemon is my very favorite, though.

    Ooey Gooey Lemon Cookies

    8 oz. cream cheese

    1 - 18½ oz. lemon cake mix

    ½ c. softened butter

    ¼ c. powdered sugar

    1 egg

Cream together cream cheese & butter.  Stir in egg & vanilla.  Add cake mix & stir until well blended.  Refrigerate for 30 min.  Roll into 1" balls & refrigerate for 30 more min.  Roll balls in powdered sugar.  Bake at 350° for 10-13 min.

(Baking with an Air Bake cookie sheet & parchment paper works great.)
