  1. If you are starting to love being in the kitchen, you have got to try some pampered chef products and recipes. The small recipe books cost 1 dollar and the recipes look like a million bucks, taste wonderful, but are super easy to make. They also have tons of great products. check out the website in the source section.

  4. my new absolute favorite dish is eggplant parmesan - it's fun to make, not all that hard, & so impressive & delicious! take a few small eggplants, peel, & slice into 1/4-1/2 inch slices. put into a strainer in layers to drain, salting each layer, & let sit for awhile (you may need to press them with paper towels to get more of the water out). fill a skillet about 1/2-inch full with vegetable oil. dip each eggplant slice into beaten egg, then into a mix of seasoned bread crumbs & parmesan cheese, & fry in the oil til golden brown on both sides; remove to paper towels to drain.

    once you've fried all the eggplant slices, to assemble the dish, spread a thin layer of your favorite tomato sauce on the bottom of your baking dish. put down a layer of eggplant, cover with tomato sauce, & sprinkle lots of mozzarella cheese on top. repeat with a second or third layer if necessary til you've used up the eggplant. bake at like 375 for maybe 20 minutes or so, til it's heated through & the cheese is slightly browned on top.

    this probably sounds like a lot of overwhelming directions, but it's REALLY fun & not too hard, i'm an amateur cook myself! i like to serve this over spaghetti with garlic bread & salad; i always get raves!

    if you want a dessert, here's a ridiculously easy one: no-bake cheesecake! mix together 2 8-oz packages of softened cream cheese, 1 14-oz can sweetened condensed milk, 1/4 cup lemon juice, & 1 tsp vanilla until lumps are gone. pour into graham cracker or oreo crust (you can buy one from the store, or make your own by crushing up some grahams or cookies & mixing with enough melted butter so it's crumbly & can be pressed into a pan). let set in the freezer or fridge for a few hours & voila! it's so good :-)

    1 pound ground beef

    1/2 teaspoon salt

    1/4 teaspoon pepper

    1 cup shredded Cheddar cheese

    2 eggs, beaten

    1 1/2 cups milk

    3/4 cup biscuit baking mix

    In a skillet, cook beef over medium heat until no longer pink; drain. Press into an ungreased 9-in. pie plate. Sprinkle with salt, pepper and cheese. In a bowl, combine the eggs, milk and biscuit mix just until combined. Pour over cheese. Bake at 400 degrees F for 35 minutes or until a toothpick inserted near the center comes out clean.

    Ground Beef stew::

    1 pound ground beef

    6 medium potatoes, peeled and cubed

    1 (16 ounce) package baby carrots

    3 cups water

    2 tablespoons dry onion soup mix

    1 garlic clove, minced

    1 teaspoon Italian seasoning

    1 teaspoon salt

    1/4 teaspoon garlic powder

    1/4 teaspoon pepper

    1 (10.75 ounce) can condensed tomato soup, undiluted

    1 (6 ounce) can Italian tomato paste

    In a large skillet, cook beef over medium heat until no longer pink; drain. In a 5-qt. slow cooker, combine the next nine ingredients. Stir in the beef. Cover and cook on high for 4-5 hours. Stir in soup and tomato paste; cover and cook for 1 hour longer or until heated through.

    Ground Beef Noodle Casserole::

    1 (.75 ounce) packet dry brown gravy mix

    1 cup cold water

    1 pound ground beef

    1 small onion, diced

    3 garlic cloves, minced

    1 (14 ounce) jar spaghetti sauce

    1/2 cup half-and-half cream

    1 1/2 teaspoons Italian seasoning

    1/2 teaspoon dried rosemary, crushed

    salt and pepper to taste

    8 ounces wide egg noodles, cooked and drained

    2/3 cup grated Parmesan cheese, divided

    In a small bowl, combine gravy mix and water until smooth; set aside. In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Add spaghetti sauce, cream, seasonings and gravy; bring to a boil. Reduce heat; cover and simmer 15 minutes.

    Add the noodles and 1/3 cup of Parmesan cheese; mix well. Transfer to a greased 3-qt. baking dish; sprinkle with remaining Parmesan. Cover and bake at 350 degrees F for 30 minutes or until heated through.

    Chicken Marsala

    Ingredients

    2 tsps. olive oil

    1 medium onion, chopped

    1-1/2 lbs. chicken breast halves, pounded to 1/4 inch thickness

    1 cup dry Marsala wine

    3/4 cup chicken stock

    1 Tbsp. cornstarch, or arrowroot powder

    salt and pepper, to taste

    Instructions

    In a large skillet over medium-high heat, heat the oil. Add the onion and sauté for 5 minutes. Add the chicken and cook on each side for 5 minutes. Add the wine and cook for about 4 minutes until the wine looks syrupy. In a small cup, dissolve the cornstarch or arrowroot powder in the stock. Add to the chicken and cook until the sauce is thickened, about 2 minutes. Add salt and pepper to taste

    creamy garlic pasta with mushrooms and prosciutto

    1 cup canned low-salt chicken broth

    3/4 cup whipping cream

    3 large garlic cloves

    1/4 teaspoon dried crushed red pepper

    1/2 cup freshly grated Parmesan cheese

    1 tablespoon butter

    12 ounces crimini or button mushrooms, cut into 1/2-inches pieces

    12 ounces penne or other tubular pasta

    1 1/2 cups frozen green peas, thawed

    8 thin prosciutto slices, cut crosswise into 1/4-inch-wide strips

    Additional freshly grated Parmesan cheese

    Preparation: Bring broth, cream, garlic, and crushed red pepper to boil in medium saucepan. Reduce heat and simmer until liquid is reduced to 3/4 cup, about 20 minutes. Remove from heat. Mix in 1/2 cup Parmesan cheese; cover and keep warm.

    Melt butter in large nonstick skillet over medium-high heat. Add mushrooms; sauté until brown and tender, about 8 minutes. Remove from heat.

    Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite.

    Drain pasta and return to pot. Add cream mixture, mushrooms and peas and stir over low heat until well coated with sauce, about 3 minutes. Mix in prosciutto. Cover and let stand 1 minute. Transfer to bowl. Serve, passing additional Parmesan cheese separately.

    9 lasagna noodles

    1/2 cup butter

    1 onion, chopped

    1 clove garlic, minced

    1/2 cup all-purpose flour

    1 teaspoon salt

    2 cups chicken broth

    1 1/2 cups milk

    4 cups shredded mozzarella cheese, divided

    1 cup grated Parmesan cheese, divided

    1 teaspoon dried basil

    1 teaspoon dried oregano

    1/2 teaspoon ground black pepper

    2 cups ricotta cheese

    2 cups cubed, cooked chicken meat

    2 (10 ounce) packages frozen chopped spinach, thawed and drained

    1 tablespoon chopped fresh parsley

    1/4 cup grated Parmesan cheese for topping
