Question:

Im totally out of vegetarian lunches to bring to school!? I ran out of healthy ideas, im buying junk!! HELP?

need some snazzy lunch ideas,

i dont mine prepare the night before or morning

as long as they are HEATHLY and TASTE GOOD!

  1. A hummus veggies wrap- 1 spinach tortilla, 6 tbsp. sun dried tomato hummus, 2/3 c. mixed veggies, 2 slices Yves veggie salami.

  2. Press a couple cloves of garlic into a large mixing bowl. Halve and thinly slice a fennel bulb and toss it in, too. Chop a tomato and pop it in. (I used a bunch of halved cherry tomatoes cuz of an E Coli scare, but they will hopefully work.) Drain a can of garbanzo beans and put them in. Pop in some diced kalamata  olives if you like 'em. A handful of chopped fresh parsley is nice. Be creative. Put in some diced bell peppers, cucumbers, shredded carrot. Whatever. Salt, pepper, red wine vinegar, olive oil! Do it your way. Let it marinate for awhile.

    You can eat this as is, or get yourself a hard roll/small baguette, hollow out the middle, and fill it up (dribble some of the juices on before you put the top half of the bread on!). Wrap it in foil and let it sit like that for at least a couple of hours. Mmmm. Tasty. Watch out for garlic breath.

  4. I love this site.  I think she has a book, too.  If you have a muffin pan, get a corn bread mix or make it from scratch.  

    Here's an idea. Fill each muffin tin up half way with batter.  Place a quarter of a veggie hot dog and then pour batter to fill tin - Veggie Corn Dog Muffins.  Pack some baked beans and a salad.

  5. Get a thermos so you can pack a nice, hot lunch or a cool summer salad, such as tabouleh.  A thermos will keep your meal hot for about 8 hours, so you can heat it in the morning, and enjoy it for lunch.  My daughter likes veggie stew, ratatoulli, quinoa pilaf, mac and cheese with peppers, or some other type of pasta.  Soups are good too.  Just round out the meal with some fruit, a salad, or some hummus or dip with raw veggies.  In summer, my daughter likes lettuce wraps-just chop up some cucumber, tomato, parsley, bell peppers, etc, and wrap in a lettuce leaf.  She also likes quinoa or tabouleh wrapped in a lettuce leaf.  Having a thermos gives you more options than just always packing a cold lunch-great for leftovers from dinner.  Good luck,, and GOOD ON YOU for choosing healthy food for your body!
