If you write on someone's wall once, and then you block that person, will that wall post still be on that person's wall?

yes, but if someone tries to click on your name it will only give basic info as if they searched for you and not your profile.  You will need to delete wall post prior to blocking someone.  make sure u delte first, becuase i think once u block / un firend them i'm not sure if u can delte them...worth a try, but it def does not auto delete.

yes but you can delete it then block that person if you dont want it to appear

Nope, that Wall post won't be on their Wall anymore. After you block them, Facebook automatically hides the Wall posts you wrote to that person. However, once you remove the block, your Wall post will go back on their Wall. That doesn't mean that they can also look at your profile -- they'll have to add you for that (assuming you have a private profile) since blocking people automatically deletes them from your friends' list.
