In Germany, what kind of sauce do they serve when you order ham?

I´m making pre-cooked, sliced ham for my husband, and cannot reach him to ask him what kind of sauce he prefers.

Do German people like mustard, horseradish, or a sweet sauce?

Thats like asking if Americans perfer hot or mild sauce, it all depends on his taste. If you serve Senf (mustard) it has to be german mustard, every body in Germany likes sweet stuff fresh bread rolls and nutella goes with everything, I dont know what horseradish is, but I wouldnt think that a sweet sauce would go well with ham.  I would say mustard, yes

I would prefer it with Mustard, but hey, I am coming from a town which is famous for Mustard (= Duesseldorfer Loewensenf!)

To me, as I'm Bavarian, a horseradish-cream sauce would be the best with ham, and is in my region traditionally served in winter. It's easy to make, just take some cream and readymade horseradish (the spicy sort), and let it reduce in a pan at low heat until it has reached the right consistency. If you have, add some black and/or green pepper seeds in the end. (They're not supposed to be eaten, but just provide some additional taste.)

You may also use fresh horseradish, but you'll have to shrub it yourself, and the dosage requires a bit of feeling... -- So as a starter, you should opt for the readymade.

In Germany, to most meat dishes with horseradish sauce, also some canned cranberries* are served, to sweeten the sauce as to one's liking.

[*: Actually, cranberry is not a correct translation for the German Preiselbeere; they are two different kinds of berries, but similar in taste. And Preiselbeere actually is only served with venison; but we can be creative, aren't we?]
