In MTG, when a basic land is tapped for mana does this phenomena go on the stack?

for instance: if a player taps 3 forests to create 3 green mana -and play play a Trained Elephant (or whatever)- can another player return/tap one of those lands (with a spell or ability) in order to prevent the mana from being created -and thus prevent Trained Elephant from being played-?

No. Mana abilities (every ability that produce mana) do not use the stack. This is true for every card, not only for lands. If you tap prodigal sorcerer to deal 1 damage, that ability will use the stack. If you tap birds of paradise to add mana, it will not use the stack.
