In San Jose Costa Rica I buy fish called Bolillo, what is it in English_?

Question

The fish Bolillo is sold in many markets. It is cut in cross sections and contains a round bone which I assume is from the back bone. The flesh is white and a little tough. It tastes fairly good not fishy and is realatively cheap. Because it comes from a fairly large and roundish fish I assume it is either shark, marlin, sowrd fish. Please tell me what I am eating. Thanks

Bolillo is a slang word for white people,similiar to gringo so I would assume its whitefish

not exactly sure, but it may be whitefish
