Question:

In Thailand I had a clear, hot sauce that came with my rice. It seemed pretty common. Any ideas what it was?

Like I said, It came with the rice that we were served and it was pretty much everywhere. In restaurants it came in a little bowl with chili slices and spring onion in it. With take away it came in a little plastic inflated bag, again with the chilils and spring onions. It had a really strong flavour and added a kick to the meal. I'm trying to find it in Melbourne Australia.

If you know what it was or where I can find it in Australia Let me know.

  1. it's called a thai chili fish sauce..

    here's how you do it..

    Ingredients

        * 6 tablespoons Thai fish sauce

        * 5 tablespoons scallions, spring or green onions thinly sliced

        * 3 tablespoons lime juice or lemon juice, fresh

        * 3 tablespoons cilantro finely chopped

        * 1 1/2 tablespoons serrano chiles minced or dried roasted red pepper

        * 1/2 teaspoon garlic minced

    Directions

       1. Combine all ingredients in a small bowl and mix well.

       2. Will keep in refrigerator for 3 days or even longer.

    the problem is, you have to have the thai fish sauce.. if you can find one in Australia, you're lucky...


  2. It's probably Naam Prik Kapi which is usually made with fish sauce (3 tbsp), lime juice (3 tbsp), garlic (1 tbsp), chili (1 tbsp), sugar (1 tbsp) and fermented shrimp paste (1 tbsp).

    In case you can't find it ready made, I've included the quantities so you can make it yourself.

    EDIT:

    All of the ingredients are very easy to get in Brisbane and should be even easier to get in Melbourne. Try Little Bourke Street, but even the larger supermarkets will probably have them - my local Coles does.

  3. it is fish sauce, Thai chili peppers,lime juice, maybe a bit of msg and cilantro...you can also add sliced red onions...it is tasty
