  1. The pH drops due to the bacteria taking in O2 and giving off CO2, which is acidic.  The countermeasure is highly dependent on the pH involved.  In textiles, the drop is a good thing since the pH may be high to begin with.  Otherwise lime or caustic addition may be needed.
