If you have the GCN version, Link is a lefty, so start riding on the left side of the bridge holding B ready to spin attack, when you're about to nearly crash against him, quickly turn Epona to the right side if the bridge (at fast pace of course) and let go of B. If you have the Wii version then start riding on the right side.
