  1. each state has there own way of making them some roll them and some are served openand some are folded over. they are also made with different colored tortillas.theres also different fillings for them besides american cheese and meat.

  3. I've seen it done both ways, usually the bottom sides are slightly over-lapped and it is either slightly flattened or left in a almost burritto like form. I think it depends on the filling.

  6. Rolled.  Flat is not an enchilada!  But, if they are filled with only cheese, they might appear pretty flat?

  7. The one my daughter had in Ensenada last January was rolled.  I have not heard of them flat.  If the flat tortilla was crisp, that would be a tostada.
