  2. Well a turning knife is mainly used to shape potatoes into chateau potatoes, so they look barrel shaped.

  3. I am a former chef and both are right, I have several ones and they range from 2 1/2" to 4" long, the curved one is better for smaller piece to be turned for soups or stewed item, I like a larger on for potato's.

    I even was taught by a Japanese friend how to turn mushroom caps for fancy dishes, it is easy to learn and a fun thing to practice at home or use for a special dinner party or intimate dinner for 2.
