  1. starch and soy sauce...

  2. 3/4 cup beef broth

1 tablespoon plus 1 teaspoon oyster sauce*

    1 teaspoon dark soy sauce

    1/2 teaspoon granulated sugar

    1 tablespoon cornstarch

In a small saucepan, combine all ingredients in order given and bring to a boil over medium-high heat, stirring constantly until thickened.

    Makes about 1/3 cup.

*Oyster sauce can be found in the Asian specialty foods section of most supermarkets

  3. Brown is usually oyster or abalone sauce, and also soy sauce (there's various types of soy sauces) though soy sauce-based gravies would be darker in color, leaning more towards black & very dark brown. It's usually not used neat but mixed with some water and thickened using cornflour solution.

  4. Hello!

The brown sauce you are refering to is most to be one of these:

    A- "Oyster sauce"

    Heres a pic-

Oyster sauce is made by condensing oyster extracts, which is made by cooking oysters in water until a white broth is produced.

The opaque broth is then cooked until a desired viscosity has been reached and the liquid has caramelized to a brown colour.

The taste is savory and the sauce is often used in "chicken and broccoli", stir frying vegatables, etc...

    B- Black bean sauce:

This sauce is delicious when cooking seafood.

    Heres a pic:

The sauce is made with fermented black beans,(heavily salted black soybeans)

This sauce is commercially available in glass jars from companies such as "Lee Kum kee"

The taste is earthy and intense! on the savory side.

    I hope that helps you!

    GOOD LUCK!

  5. A lot of the time they use hoisin sauce, you can find it at the super market, and some soy sauce. For thickener, you add a bit of cornstarch to water, mix it good then add it into your stir fry. There are ready-made sauces at the store you can use, add some hoisin sauce and there you go.

  6. Soya beans.(Soy Sauce)

    Potato Starch or Cornflour.(Thickener)

    Mono Sodium Glutamate..M.S.G.  (Flavor Enhancer)
