Indian bread which has vegs and spices etc inside the pastry?

I have for many years looked for a recipe for a bread pattie that I had at the home of some Indian people, it was a flat bread with vegs and spices inside, absolutely delicious, it was served with a variety of other dishes but no papadams or the like, it was about 1/3 inch thick and I don't know if it was fried or not

please put an end to my years of searching

    Ingredients

    Black gram(Uzhunnuparippu) - 1 cup

    Rice - 2 cups

    Salt - ½ tsp

    Potato(large) - 5 nos

    Onions(large) - 2 nos

    Garlic pods - 6 nos

    Ginger(grated) - 2 tsp

    Green chillies - 4 nos

    Black gram (split) - 1 tsp

    Mustard seeds - ½ tsp

    Cumin seeds - ½ tsp

    Dry red chilly(Kollamulaku) - 1 no

    Curry leaves - 10 pieces

    Turmeric powder - ¼ tsp

    Vegetable oil - 1 tsp

    Salt - As reqd

    For chutney:-

    Coconut - 1/2 of one

    Green chillies - 4 nos

    Ginger(chopped) - 1 tsp

    Coriander leaves - A bunch

    Tamarind(Puli) - A tiny piece

    Salt - As reqd  



    Preparation Method

    1)Wash thoroughly and soak black gram and rice separately for 6 - 8 hrs.

    2)Grind them separately into very smooth paste and mix them together adding salt.

    3)Allow this dough to ferment overnight during winter and 4 to 5 hours in summer.

    For the stuffing (masala):-

    4)Boil potatoes and chop onions, ginger, garlic and green chillies may be finely chopped or made into paste.

    5)Heat oil in a broad pan.

    6)Add a tsp of black gram, mustard and red chillies.

    7)When mustard seeds splutter, add cumin seeds, onion pieces, ginger garlic and green chillies (finely chopped or ground), turmeric powder, curry leaves broken into pieces and fry till transparent.

    8)Meanwhile, peel the boiled potatoes and cut them into medium size pieces.

    9)Add them to the frying onions, mix well, remove from fire after about 5 mins and set aside.

    10)Make the chutney by grinding together 1/2 coconut, 4 green chillies, 1 tsp of ginger, a bunch of cilantro, tiny piece of tamarind and salt to taste into fine, thin paste, adding water.

    11)Heat a flat pan and make thin dosas by spreading the dough on the pan with a ladle.

    12)Spread oil all around the dosa and when the edges turn golden brown, don`t over turn the dosa but place two table spoons of the prepared masala on the dosa and first fold one side over it and then the other side and remove from pan and serve.

    13)Repeat the procedure for the next dosa.

    :- The secret of crisp dosas lies in the amount of oil spread around it.

    With chutney these masala dosas make great eating.

  4. Its called roti. Also called aloo brota. It can have mashed potatos, veges or anything really. Their baked not fried. Very healthy. English call it Japati's.

  8. it was probably samosas. they are usually triangle(ish) in shape. here's an easy recipe.

    Ingredients

    •2 medium portion potato(es), peeled and cut into dice

    •1 spray low-fat cooking spray

    •1 small carrot(s), finely chopped

    •1 small onion(s), finely chopped

    •50 g cooked frozen peas, thawed

    •1/2 teaspoon ground cumin

    •1/2 teaspoon ground coriander

    •1/4 teaspoon chilli powder

    •1/4 teaspoon turmeric, ground

    •1 teaspoon garlic, puree

    •1 tablespoon fresh coriander, chopped fresh (or mint)

    •1 pinch salt, to taste

    •1 serving pepper, freshly ground, black

    •5 sheet filo pastry, thawed if frozen

    Cook potatoes and carrot in boiling, salted water until tender - about 10 minutes. Drain and partially mash them. Mist non-stick frying pan with cooking spray. Sauté onion until softened, about 2 minutes. Stir onion, peas, cumin, ground coriander, chilli powder, turmeric, garlic puree and fresh coriander or mint into potatoes and carrots. Season to taste. Cool completely.

    Preheat oven to Gas Mark 4/180°C/350°F. Mist baking sheets with spray cooking oil. Cut filo pastry sheets into strips, measuring approximately 30 cm x 10 cm (12 inches x 4 inches). Place a tablespoon of mixture at one end of a pastry strip. Fold over and over to make a triangle. Repeat to make 20 samosas.

    Mist with cooking spray, place onto baking sheets and bake for 25 - 30 minutes, until golden.
