Indian cooking- what ARE those pickles? (Achari)?

A very good Indian restaurant near me has a dish called "Achari" chicken or lamb. I adore it as it is cooked with various home made pickles, which I am a huge fan of. I have asked the restaurant what they are but no one seemed willing to give me the answer to their secret. Does anyone know what they could possibly be so I can try to recreate something at home? They look like dark green peas once cooked, and are slightly juicy and tangy. Many thanks!

  1. Sounds like a type of green chilli.

    If they were larger (like marble size), they could have been baby raw mangoes.


  2. Achari is not cooked with home made pickles - it just has the ingredients used to make pickles (achar - hence achari !)

    Try this - hope u like it :

    Ingredients: 1 kg chicken

    100 ml oil

    4 tsp fennel seeds

    2 tsp black mustard seeds

    1 tsp fenugreek seeds

    1/2 tsp nigella seeds

    2 tsp cumin seeds

    4 ground onions

    8 chopped green chillies

    1/2 tsp turmeric

    3 tsp ginger paste

    200 ml whipped curd

    3 tsp dry mango powder

    2 tsp kashmiri mirch

    2 tsp sugar

    Method: Heat the oil and fry the fennel, fenugreek, nigella and cumin seeds. After 15-20 seconds, add onions and green chillies (op). Stir and fry until golden.

    Add turmeric powder, garlic and ginger pastes. Fry for a minute. Beat the yogurt well and pour, dry mango powder, chilli powder, sugar and salt. Cook until oil separates.

    Add chicken with about 150 ml water. Once the gravy comes to a boil, simmer till done. Season and serve.

  3. Achar is the Punjabi word for pickle... try your local  Indian supermarket and you will see loads of jars of pickle, Mango, lime, chilli pickles, see if you can see the one you like.

  4. could be green chillies soaked in lemon juice. I'm only guessing here.

  5. Nishi is absolutely right,Try the recipe given by her and you'll get what you're looking for.You can even get a readymade packet from an Indian grocery store.you just have to add chicken,lamb or paneer to it.
