Indians what is the best raita recipe?

i have a basic recipe, but can't make it at the level of indian restuarants for some reason

i had some regular yogurt, stir it finely, add some finely chopped cucumbers, cumin, red chili powder, black pepper and a little water to get that liquid consistency...but still it doesn't taste like the restaurant...what am i missing?

  1. Dont chop the cucumbers - grate them instead,

    Add some finely chopped red onions also

    Put some garam masala in also aswell as coriander power

    Roasted  cumin seeds are also essential

    For extra taste add finely chopped coriander

    And also chaat masala if you can find it (usually indian shops)


  2. how is it different from the restaurant??? you have almost all of it right, but if you add a little milk you could be closer to getting that same taste. but the raita from the restaurant isn't authentic, if you want authentic Indian raita, don't go after the restaurant recipe

  3. You need to add salt, chilli powder and cumin powder. We don't add black pepper.

  4. You are missing the essential ingredient, dry-roasted cumin seeds.

    Heat a pan. Add whole cumin seeds to the pan (No oil or anything, just the seeds). Let the seeds roast. They will turn dark brown to almost black. Shut off heat. Let the seeds cool off. Now, grind the seeds to coarse. You can do than in cheap coffee grinder.

    Stir in the dry-roasted cumin seeds

  5. If you are using whole fat yogurt then add skim milk until it is thinned out to your liking. You need about a cube of sugar (or more if it still taste bitter) and salt to taste also. Water is okay to use, but it doesn't taste as good as milk. Most restaurants use only black pepper, salt, sugar, cucumber, but there are so many ways to make it. Try it with boondi also after adding milk, salt, sugar, and pepper. . Soak the boondi in warm water for 5 minute. Scoop the boondi out and squeeze the water out. It is a very easy and tasty way to prepare it. That way you don't have to chop veggies.

  6. My family always adds fresh minced garlic.  It adds so much flavor.
