Info on an almond tree

Question

I have an almond tree that, even though the info says I need more than one tree to have almonds, is loaded with them. I live in upstate NY where almonds don't usually grow. Was wondering if anyone knows when I should expect to harvest them and if I have to do something to the almonds after harvesting. Like roasting them?
