are they usually kept cold?

The home itself is not freezing cold but it is air-conditioned.  The area where they will hold the body when not in viewing will be colder.

Actually, no they aren't.  After someone is embalmed, keeping htem cool is not necessary.  It would not help nor hinder the embalming, and it isn't necessary to keep the place cold.  It's very warm in the winter!
