I just purchased two Luhr-Jensen top loader little chief smokers from a private sale. Problem is, the man has had them for so long that he didn't have the instruction/recipe booklet that came with them. I want to be able to cold smoke various cheeses and some salmon. I have no idea on how long or how hot or cold to keep these products while cooking them. I did some aged cheddar today using hickory chips/ and four soup cans with some frozen water in them. I went through two pans of chips ( always checking) and the cheese did soften up a bit. I now have them in the freezer for a bit. Is there a web site that I can download and print an instruction booklet?? Any suggestions/ advice would be hugely appreciated. Sincerely-- Geoff
