International travel with children having severe food allergies?

My family is thinking of taking a winter vacation about 8-10 days long within January-March. My brother has severe allergies to nuts, eggs, dairy products, and fish. What kind of international resorts and destinations have facilities that would accommodate these allergies well, in somewhere like Mexico, the Dominican Republic, etc. We're open, so give as many ideas as possible.
