Technically, yes. It depends on who you're talking to, though, and whether or not she has a sense of humor.

I prefer wench, personally.

If you are in a tavern or pub in the 1800's in England or the states, you can use that term.  Otherwise, waitress or bartender.

Of course, if everyone is dressed up for that era in a theme tavern, it's bar maid all the way.
