  1. Pectin IS suitable for vegetarians, as it comes from fruit.

    Gelatine is NOT suitable for vegetarians, as it is from the connective tissues of animals.


  2. Gelling agents:  Some are suitable for vegetarians but Gelatin (E441, made by partial hydrolysis of animal collagen) is not.

    Edit: added a link to show you the different types of gelling agents.

  3. You will find a bunch of gelling agents that are... agar , xantham(don't know spelling) those are the main ones i'm pretty sure
