OK. Colour is determined by the chemical composition of the object. So, water, for example, when light hits it and reflects (or refracts) it changes the wavelength of the light and appears to be slightly blue. Chlorophyl in grass bends light in exactly the same way and absorbs the red and blue wavelengths (for photosynthesis) and so only reflects green. So, unless grass changes its entire chemical composition every time you look away then it is STILL green. All the time.

When no-one's looking it isn't any colour because colour is a conscious sensation (a quale).

If you're asking whether it reflects the same frequencies of light when no-one's looking at it, then yes, it does. It has no internal mechanisms or chemicals to allow it to do otherwise.

The chlorophyll in the grass makes it green, stains it. If you remove the chlorophyll, the grass will become white. The same applies to other plants that contain chlorophyll.

The grass will look a different colour completely if you are colour-blind.
