  1. my coworker said you could scramble it up like eggs and that i pretty much tastes like whatever you put in it. so i guess you could add to it whatever you add to your eggs.

  2. Scrambled tofu is great, depending on how you season it.  I use garlic, onions, cumin, paprika, thyme, turmeric, salt, nutritional yeast and lemon juice.  It's delicious and filling, but it doesn't taste like eggs.

If you really want to try to make it taste like egg, see if you can find black salt.  A small amount will give a hint of sulphur-y, egg-y taste (supposedly it works really well in tofu-based egg salad recipes.)

I use extra firm tofu, pressed for an hour to get as much liquid out as possible, for my scramble.  Some people swear by silken, but I don't like the squishy texture of it.  It's all personal preference, though.

If you're looking for something like a sunny side up or fried egg, there's really nothing that will duplicate that.  But if you're using an egg-white-based alternative now, you're not making a fried egg anyway.

Here's a recipe for scramble to get you started.  You can always change up seasonings to customize it to your tastes: http://www.theppk.com/recipes/dbrecipes/...

  3. Remember that tofu in and of itself is totally bland.  It will however take on the delicious flavors of things you put with it.

I "scramble" up a firm tofu with bell peppers, onions, a sprinkling of tumeric, salt and pepper (kind of like scrambled eggs).  My whole family loves it.

For eating this way, I prefer the water-packed tofu found in the refrigerated section.  Just be sure to drain well before using.

  4. Ug, no way.  I think tofo is nasty. Why don't you stick with the egg substitute?

  5. I think you were basically referring to when we use eggs as binders, though, weren't you? I do the whole scrambled tofu thing with the turmeric, but in the case of binding stuff together, you can mix a few Tbsp. of flax seed meal in a little water and it gives it that eggy consistency.

What is really sweet is that I made wholewheat blueberry pancakes recently and didn't use eggs and they came out absolutely delectable!

  6. Hi Smile,

I am a Reference Librarian.  It will take me a few minutes to research your question.

Perhaps you are interested in Fantastic Foods brand

"Tofu Scrambler,"  a tofu substitute for scrambled eggs.   Please see the first website for the brand's website.

If you are thinking of using an egg substitute for other cooking, there are several good brands available at most grocery stores.  Check the label for cooking suggestions.

Also, I have included a website for cooking with tofu, not eggs.

I have been a vegetarian for 18 years, and vegan for 16.  If you are choosing to cut down on animal products, I highly rec commend that you do so gradually.

    Good luck!

  7. Tofu is good, it is very common in Japanese and Chinese cuisine. Tofu is made of soybeans, so it does contain many protein like egg white. Yet, it does not have cholesterol as egg yolk does, so you may say it even healthier.

Tofu has no taste, it absorbs the flavours from sauces and seasonings only, plain tofu really does not taste as great an egg. And oh, there are soft tofu and harder, drier tofu. Soft tofu contains more moisture, very fragile. If you want to take rid of some of the moisture, you can place a towel on both the bottom and top of the tofu, then place a plate (not too heavy and with a flat bottom, so it does not damage the tofu), after an hour or so, some moisture will be squeezed out, the tofu will be easier to handle. Dry tofu is brownish yellow, usually small and thinner than normal tofu and it is actually fried tofu, but I am not sure whether you can get it in America.

Hey, just remember do not eat spinach and tofu together, they coaggulate in your body and if you always eat them together, they will form tiny substance that block your urethra and you will be very painful when you urinate. :))))))
