    The main difference will probably for your health. Natural gas is a quite pure product which has been desulfurized. It has a low viscosity (gas) and mixes easily with the air thus producing close to no soot.

    Charcoal on the other hand might pollute your food with the ashes left of the combustion and soot.

    The worst case off course is fat over a grill without aluminium layers which. In this case, chances are that fat will drip down to the incandescent charcoal and come back to your food as a carcinogene vapor.
