Are inflatables useful or not? Do they provide a normal sail catamaran's joy and safety?

  1. no.

You can't get the rigidity or the sculpted hull shape in an inflatable, and so you can't get the same sailing qualities.  If given a choice I would go with rigid.

But that might not be your choice.  If it's a choice between inflatable or nothing, there might be a justification for an inflatable, IF you can get one reasonable stable.  I know the sail setup for the sevylor inflatable was simply awful, couldn't sail closer than about 60 degrees to the wind, and the leeway was horrendous.  Basically it could only sail downwind.  That was due to the lack of a good keel setup and the lack of rigidity of the hull vs the mast.

With a catamaran, the most fun is sailing close-hauled as near to the wind as you can get, and you sail like a skate across the water.  You'd have to see your inflatable demonstrated before you could have any confidance that you'd be able to do that.
