Is anyone familiar with the sugar pie at St. Hubert restaurants?

How do they get it so crisp?

How would you rate it compared to other sugar pies?

  1. they use a thn layer of crust then put a little butter on the top and springle sugar


  2. i think they lightly brush egg whites on the top about a half an hour before it comes out of the oven or when it starts to set up a little.

  5. haven't been to st. hubert in years.  not too many of them outside of quebec.  i think i might have tried the sugar pie years ago.  tasted good i think.
