  1. Balkan-style describes a production process whereby the cultured product is set in individual cups rather than in a single, large vat. This type of processing adds to the unique flavour and smooth texture of the product; it is often thicker than other styles.

    GREEK YOGURT:

    It's thicker & creamier:

    Traditional Yogurt is made with the common lactobacillus bulgaricus and streptococcus thermophilus cultures, providing a slightly tangy taste.

    Greek Yogurt is a form that is made with cream and milk, after the whey has been removed and culture has been added. This results in a thicker textured yogurt.

    Greek yogurt varieties are made with ewe’s milk contain about 5% milkfat, and cow’s milk yogurts contain 9% (as opposed to whole-milk yogurts in this country which have around 3.5%).


  2. "Desi Chef", makes a good point, I am a former chef and have used both and when one is not available the other is interchangable.

    Greek tends to be firmer and creamier, Balkan can be a bit more tart, but when using it for Tzatziki, Greek desserts or in food sauce for hot dishes they are very similar, like the arguement about Greek and Bulgarian feta cheese, both are good it is all a matter of tastes and likes in those products.
