  5. Usually they are oily because of frying(deep fry) and stir fry. I live here in LA county somewhere a turf of chinese people and where most of the restaurants if not chinese, it's asian (thai, viet, korean, japanese).

    I have tried to eat in almost every chinese restaurant here and found that many food in their menu are oily.  Even the rice is oily. Maybe except for some steamed paos and dumplings.

    And I have a cousin who visited the Hongkong, Macau, and China, said their food is oily.

It depends where you go, there is a lot of regional variation in the food.  Here in Beijing, the food does tend to be extremely oily.  But any major Chinese city will have a multitude of different restaurants.  So if you don't like the oily food, you can find something else.  If you are coming, I recommend hitting a Uighur restaurant and getting some lamb.  That is the best meat I think I have ever tasted.  If you are coming to Beijing, hit up Ah Da Xi in Chaoyang district, close to the Dawanglu subway stop.

  9. There is an overuse in oil in Chinese restaurant cooking. Very worst food is fried rice and noodles - shay away of both if you have calorie concerns.

    Since you can not really avoid oil you can chose to reduce your total intake and add some fruits you buy in supermarkets.

    Less oily are cooked noodles or most things in soup, as long as you don't eat the soup itself.
