  1. Sometimes the ingredients are written in a complicated manner. Egg White is "Albumin" which may be written as a protein ingredient.

    As for milk products, one common mistake is not to read "non-dairy" creamer as a milk derivative. If there is Casein/caseinate  it is a milk protein. It acts as a binder linking cheese into a chunk. It also has a weaker taste that the currently commercially available soy based emulsifiers.


  2. Bird's custard powder is a brand that doesn't contain any egg.  It's basically just cornstarch with some coloring in it.

  3. Depends on the brand, most likely.
