  3. no sharpening is just the act of putting the edges back to the right angle and point.  Honing is the act of putting a sharp edge on the point that you have just created.  A sharp knife will cut but a honed blade will shave.  Honing is usually done with a oil stone while sharpening is done on something like a file or grinder.

  5. theres different roughness to sharpening stones. basically rough (black), medium (white)and fine(redish) usually. but not always.. the density and size of the grit the stone is made, like sandpaper. a honing stone is usually finer than a sharpening stone. once a blade is sharpened it can be maintained with a leather and or linen strap, like a barber strap, hope this helps.stones take metal off, leather just polishes an existing edge.
