Is it 'Ser' or 'Estar' in these 2 Spanish sentence?

If I want to say:

1) I am sure that the food is better in Spain

Estoy seguro de que la comida es mejor en Espana??

and

- 2) He was sure that laughing a lot helped him recover from his illness.

  1. To say "estar" is temporary and "ser" is permanent is incorrect.

    Estar is for present progressive, health, emotion, and location.  

    Ser is for traits, time, profession, and origin.  All but origin obviously can change, so they're not permanent.

    2. use estar because it's emotion and health.

    'Ser seguro' denotes confidence in self.

    Remember, "estar" is for temporary concepts, while "ser" is used to describe permanent attributes of a noun.
