I assume you mean "palate" and by that I assume you mean that we don't have a sophisticated sense of taste.  That's just silly.  Just like meat eaters, some vegetarians have simple tastes and some are gourmet cooks (and everywhere in between.)

If by that you mean they can't taste things, then no.  Vegetarians can taste things and many of them are very acomplished cooks.
