  1. 'I' is actually reserved for phrases where you can chop off the other people/person and have the sentence still make sense.

    As in "My brother and I enjoy reading." - "...I enjoy reading."

    Therefore, "between you and me" would be correct since the speaker's role does not continue into the second half of the sentence.
