  1. yes - just be careful not to over cook it as it will really dry out.  You could try stuffing it with something (i.e. soft cheese with garlic, or some haggis or black pudding) and you can also wrap it up in bacon or parma ham or something which helps keep the moisture in.

  5. I bake my chicken breast all the time. I add what ever I want for herbs and seasonings but I use chicken broth or stock for the liquid instead of water. i think it gives it a much better taste and keeps it very moist! I bake mine for about 35 mins. Hope that helps and happy cooking!

  8. Yes, just season it and make sure you put water around it so that it will be moist.  recommend baking with rice or noodles too.

  9. Yes, but sometimes it comes out dry. It's better if it is coated with something to keep the moisture in. Try this one.

    Magically Moist Chicken

    ¼ cup mayonnaise *

    10-12 Pepperidge Farm Hearty Wheat Crackers *

    4 boneless chicken b*****s or pork loin chops

    Preheat oven to 350 F. Put mayonnaise in a plastic zip lock bag. Put crackers in a food processor and grind into crumbs. Put crumbs in another zip lock bag. Add chicken to mayonnaise and coat. Remove and add to crackers and coat. Be sure to coat well. Put chicken in shallow casserole dish. Bake for 15 minutes, turn over, and bake for another 15 minutes.

    * - You can substitute anything thick and creamy for the mayonnaise, like ranch dressing, miracle whip, horseradish sauce, etc. Different crackers can be used as well, but I like these the best.

    BAKED CHICKEN b*****s

    8 b*****s - halve, bone and skin

    2 c. sour cream

    1/2 c. lemon juice

    1 tsp. Worcestershire sauce

    3 tsp. celery salt

    2 tsp. paprika

    Garlic powder

    3 tsp. salt

    1/2 c. butter (melted)

    1/2 tsp. pepper

    1 3/4 c. dry bread crumbs

    Dry chicken. In large bowl combine sour cream, lemon juice, Worcestershire sauce, celery salt, paprika, garlic powder, salt and pepper. Add chicken, coating each piece well. Let stand covered, overnight in the refrigerator.

    Next day, preheat oven to 350 degrees. Arrange chicken in single layer in large shallow baking pan. Sprinkle top with crumbs. Spoon melted butter over all. Bake uncovered 1 hour or until chicken is tender and brown.
