i was supposed to make a plain mead but i disliked the taste when i tasted it after racking, it had no flavor at all. i want to add some apple juice and cinnamon powder to it, but the thing is it had already stopped fermenting and it is ready for aging. is it ok if i put them in now? .

  1. Cinnamon would be ok, if you like the taste. If you add apple juice, you would either have to re-ferment or adjust the amount of priming sugar to avoid "bottle bombs". You might consider flavoring extracts. Companies like Spices Etc. carry them. How about a nice mango mead? black walnut? peppermint?
