Is it okay to make it now?

I'm having a party tomorrow, is it okay if I make the brownies and pineapple upside down cakes now? or should I wait until tomorrow morning. The party starts at 1pm

It would be fine to make the brownies now, I'm not sure about the pineapple upside down cake because part of the effect is eating it a little warm, either way though you could re warm it slightly before you serve it and still make it the day ahead

You will be fine to bake both today.  I would just cool them and then store them at room temperature, covered, overnight.  As long as they are covered, you won't have any troubles with them going bad before your party.

I've baked things about a week in advance before and I've never had a problem!

If you think they won't be as fresh tomorrow, bake them today, let them cool and freeze them overnight.  Take them out about 10 am and let them thaw.  But I really think it isn't necessary as neither will deteriorate noticeably overnight.
