    rice flour

    corn flour,

    also: barley, rye, spelt, oat, chickpea (garbanzo), manioc (tapioca or cassava),

    Allowed Flours and Starches:  [for the gluten-free diet]

            Grains:  non-enhanced rice; corn and popcorn; sorghum (milo); flax; wild rice.

             Roots and Tubers:  tapioca; potato; arrowroot; sweet potato.

             Legumes:  bean; fava bean; soybean; garbanzo bean; lentils; peas; peanuts.

             Nuts:  almond; chestnut; acorn; hazelnut; walnuts, Brazil nuts, cashews, water chestnuts.

           Seeds:  sunflower; mustard; sesame; safflower, coconut, poppy, alfalfa, Montina.

    if gluten is not an issue, there are tons of different flours... rye, oat, lots and lots. go to a store like whole foods or trader joes, they have a good selection

  9. Any ground-up grain is called a "flour" and other foods can be made into flours too.

    It's just that in the U.S. we primarily use *wheat* grain to make the flour we use the most, then just call it plain "flour" as if there were no other type.  In fact, in the U.S. we call the flour made from corn "cornstarch," but in other countries it's called corn flour.  

    So there are all kinds of flours made from various grains and other things you can buy if you are allergic to wheat ... they may react a little differently though when used in various foods/sauces/etc.

    But if you're only bothered by the gluten in wheat flour, you can buy low-gluten or gluten-free (I think) wheat flours or you can buy other types of flours.  

    You can also buy various flours (in bulk at places like Whole Foods, etc., or in bags) then mix them in varying proportions yourself.
