Is it possible to heat jelly so much that it won't set anymore?

Because gelatin is a protein and when its denatured it wont function anymore. But that duzent make any sense cuz i heat my jelly a lot and it stil sets no matter what...

    Gelatin is *already* denatured - it is denatured collagen.

    The "gelling" properties of gelatin are a residual property that still occurs after denaturing the collagen. Collagen has other properties (like binding other proteins, providing a "solid" substrate for cell adhesion, migration, and growth, signalling cells by specific peptide motifs, etc) that are all either destroyed or changed by denaturation.
