  1. Yes.  Go to "settings" at the top of your facebook profile page.  Then click "privacy settings".  You want to change your "profile settings" and specifically your "basic information".  To make it so that only one of your friends (aka: your brother) can't see your information click on the tab at the bottom of basic information that say "Edit custom settings".  and input his name in "except these people".

  2. Yep, there's a way to hide certain sections of your profile from others. This can be done by changing your privacy settings. If you want to hide your bisexuality and relationship status, that falls under the "Basic Info" category. Here's how to restrict sections:

    1) First get to your "Privacy Settings" page. (You can use this link: http://www.facebook.com/privacy/?ref=mb)

    2) Now click "Profile."

    3) Under the drop-down menu box next to "Basic Info," choose the Customize option.

    4) At the bottom of the pop-up is a section in red that says "Except these people." Type in the names of the people you don't want to see your Basic Info.

    5) Click the blue Okay button to close the pop-up, then click the blue Save Changes button at the bottom of the screen.

Now you've hidden your Basic Info from certain people. You can also use the same steps to hide other parts of your profile.
