it is usually fast paced and you have to be on your toes to watch the gas tanks, take gas pre-payments, sell lottery tickets, and check ID's for beer and cigarettes.

Very.  The main concern is of course running a cash register, and then customer service.  If you have that, you can do anyhthing

yes it is simple but there are a lot of risks to working at one. Thieves tend to target them because there small and sometimes there is only one person working at a time.
