  1. Spaghetti doesn't have any grooves to catch the sauce and that's why pastas with dips and swoops and grooves are used with sauces.

  2. Here in Italy Bolognese sauce is used with a lot of kinds of pasta...maybe we use it more with tagliatelle, but also with hand made spaghetti. We call Napoletana sauce "tomato and basil". It' most used with spaghetti.

    The fact is that these sauces are so traditional that we make it to use with the kind of pasta we have at home. There are other kinds of sauces that have to be used with specific kind of pasta (Bucatini all'Amatriciana, Carbonara is with spaghetti, Pepper and Cheese with rigatoni, and so on...)
