Question:

Is no yeast bread healthier than yeast bread?

i love baking bread but i want to be health conscience. my bf likes the rule, the less ingredients the better, but i also know that no yeast bread is also referred to as "quick bread" just curious. Thanks.

  1. Its the same thing, if you don't add yeast, your bread will come out super flat. My teacher would say that the yeast farts, then puffing up the bread so it can be nice and fluffy. I dont think yeast has calories, its the dough.

It isn't the yeast that makes bread healthy or not, it is the other ingredients.  You can have a basic French bread that is nothing more than flour, yeast, water, salt.  That is it.  Then you can have a quickbread that contains flour, water, salt, eggs, butter, oil, etc.  You see the extra fat in the quickbread?  if you've been baking bread,you should have already known this.  Why not delve into another healthy bread... sourdough.  It is lower on the glycemic scale than regular or whole wheat bread, so it is better for people with a sugar issue.

  3. To simplify your question......Is yeast unhealthy?    The answer is that yeast is not unhealthy.    Active yeast is actually healthy (like in some yogurts).   The yeast in bread is dead due to the heat and does not have any positive or negative aspects.

    More importantly is the use of whole grain flours in your breads.   Whole grain is far more healthy than refined flour products.

  5. I say yes.  If you read the book by Dr. William Crook," The Yeast Connection."  Yeast in any food is unhealthy because it promotes the bad intestinal bacteria to grow.  This creates an off-balance in your digestive tract.
