OK, we understand that "organic" refers to the way the coffee is grown...no pesticides, no chemical fertilizers, etc. "Fair trade" refers to the fact that the people who farm and produce the coffee are paid a livable wage and  treated fairly. Fair trade coffee can be organically grown, but "organic" coffee can be grown by people who are NOT paid a livable wage and not treated fairly. It's your conscience.

    it just makes the company feel better when they say its "organic"  , and fair trade just means that they buy from the little guy lol.

The taste won't be significantly different from other high-end coffee, but the way it is produced is more responsible : giving a fair price directly to the growers and protecting the environment through organic farming practices.  Many believe that consuming organic food is better for human health as well.

That depends on whether you mean better for you or better for the farmer and the environment.  Organic coffee is better health-wise for you.  But fair trade coffee is more guaranteed to have given a farmer a fair and reasonable price for his coffee and also encouraged him to use more sustainable and environmentally sound practices.

    I suppose that ideally you coffee would meet both.  But both fair trade and organics can make the price go up.

    Note that a lot of the practices that go towards making something organic will also contribute towards it being fair trade (like sustainability), but by no means are they the same thing.
