Is pectin, asorbic acid and citris acid bad for you?

  1. Pectin and citric acid both naturally occur in fruit. They are not at all bad for you. Pectin is a dietary fiber, so it's good for you. Citric acid is able to bond to minerals, so it helps your body absorb minerals it needs, like calcium. Ascorbic acid is just the technical term for Vitamin C. You need vitamin C, and it's a good antioxidant. The real ingredient found in most jelly that you should be worried about is high fructose corn syrup

  3. Pectin occurs naturally in the skin of fruit, but sometimes you will see companies advertise something as being healthier because it has added "soy pectin" in it. Quite frankly, pectin is not required of any diet. The only purpose of pectin is insoluble fiber, but it is not harmful.

    Ascorbic acid is just a fancy was of saying "vitamin C"

    Citric acid is also a naturally occuring component of fruit.

    As for your strawberry jelly, I would worry more about the sugar content and other unnatural preservatives than pectin and the ascrorbic/citric acids.

  4. All three of these items occur naturally in some fruits. For your jelly:

    Pectin comes from the seeds of the fruit. Any fruit with seeds contains pectin. It is a form of sugar which also acts in a similar way as geletin. Basically though pectin=sugar.

    The citric acid is devired from citrus fruits mostly lemons and would be in your jelly to a)combat the sweetness and b)Keep the pectin from becoming too solid

    The ascorbic acid is a preservative but is part of vitamin C and therefor naturally found in citrus fruits however nowadays ascorbic acid is created in labratories.
