Is sirloin chop meat normally darker than regular chop meat?

just wondering if i should throw out my chop meat i just defrosted it and it was fine and then when i defrosted it seemed a tad dark. i just bought it too.

  1. Smell it, if it smells good than it should be okay.  What is probably happening is that now that it is in warmer temp than the freezer the meat is oxidizing.  It sounds gross but the blood in the meat is just turning a darker color which is normal.  When blood hits the air, it is no longer that bright red color it naturally turns darker towards brown.


  2. If your referring to a pork chop then "Yes", they tend to be a bit darker then rib or loin chops and butt chops to will be slightly redder in colour, it is due to blood flow and the muscles action.

    I am a former chef and actually prefer shoulder and sirloin pork chops the meat has more flavour, frozen and defrosted is no problem, unless it has been a few weeks since taking it out of the freezer.
