It's good because it's more complex than the Federation/Borg war, or the short lived Borg/Species 8472 war.  

The Dominion War had, on one side, the Federation, then the Klingons, and finally the Romulans.  On the other side were the Founders (the ruling class), the Jem Hadar (the warriors) and the Vorta (administrators/clone race), finally the Cardassians.  

Of all the Trek wars, this one is the richest, and the one we get to see developed in the most detail.  In my opinion it'as the highpoint of Deep Space 9.
